| Title | Proteomic evidence for a ginger flavoured alcoholic beverage found in the corrosion of ancient Chinese bronze vessel |
| Description | Tryptic digest obtained from interior corrosion of eight ancient Chinese ritual bronzes at the Museum Rietberg (Zurich, Switzerland) analysed by nanoLC-MS/MS and data processed with PEAKS 8.5 against UniProt and curated databases. Only one vessel RCH55 (a hu-type) yielded diagnostic peptides matched to proteins from ginger (Zingiber officinale) and a fermentation mold (Monascus purpureus) providing direct proteomic evidence consistent with a fermented beverage residue associated with ancient Chinese recipes and supports the traditional interpretation of this vessel type in drink preparation and/or consumption. |
