| Description | This submission contains the proteomic data from the paper “Culinary diversity in early modern Brazil revealed by residues analysis of ceramic artefacts” by Di Muro et al.. In this paper the culinary use of ceramic during the late 19th and early 20th century in Brazil is investigated through biomolecular analysis of organic residues preserved in the ceramic matrix, including palaeoproteomics. Protein recovery from the ceramic vessels was extremely limited, which is in line with expected protein degradation due to the warm and humid climate, as well as cooking-induced protein degradation. Nevertheless, ancient fish (Sciaenidae) and chicken proteins could be recovered from historical ceramics. The broad taxonomic identification and limited protein recovery highlight both the potential of applying palaeoproteomics to ceramics from tropic climates, as well as the challenges. |
