Title	Peptidomics-Guided Discovery of Novel Antioxidant Peptides from Sturgeon Skin Collagen: Cellular Validation and Molecular Simulation
Description	This project contains peptidomics data generated from the <3 kDa peptide fraction (SSCP-1) derived from sturgeon skin collagen. Peptides were analysed by LC-MS/MS using an EASY-nLC system coupled to an Orbitrap Fusion Lumos mass spectrometer in data-dependent acquisition mode. Raw MS data were processed using Proteome Discoverer 2.1.0.81 with Sequest HT, and peptide spectra were searched against the UniProt Acipenser protein sequence database using a non-specific enzyme setting. The dataset was used for the discovery and screening of antioxidant peptides from sturgeon skin collagen.
